Peru - "like chocwork"

Day-to-day deliveries drop fresh from San Ignacio. Like clockwork, some might say.

Coffees are cupped, analysed, and priced the very same day, and if all parties are happy, payment is made instantly — before the lots are whisked away for milling and shipment.

The region’s ridges, humid valleys, and steady rainfall encourage slow, even ripening. The result? A creamy chocolate mouthfeel lifted by vibrant sweeter notes thrown in, too.
